Roasted Tomatillo Salsa Verde

Full of bold tomatillo, cilantro, and lime flavors, this Roasted Tomatillo Salsa Verde is one of our most favorite salsas to make. With just a few simple ingredients blended together, this salsa is zesty and can be spiced to your preferences. Pair this salsa with our Fresh Milled Sourdough Tortillas and Cilantro Lime Cabbage Slaw and you have a tasty and flavor packed supper everyone will love!

Roasted Tomatillo Salsa Verde

Full of bold tomatillo, cilantro, and lime flavors, this Roasted Tomatillo Salsa Verde is one of our most favorite salsas to make. Perfect for tacos, burritos, enchiladas or chips and salsa.

Ingredients

  • 1 lb. Tomatillos, with the wrapper taken off
  • 1 Medium Sweet Onion, quartered
  • 1 Jalapeno, halved*
  • 3 Cloves Garlic, peeled
  • 1 Bunch of Cilantro, chopped
  • 1/4 cup Olive Oil, optional but we prefer the flavor it adds
  • 1 Lime, juiced
  • 1 tsp. Salt, or more to taste

Instructions

  1. Preheat oven to 450 degrees and line a small 8x8 baking dish with parchment paper. This makes cleanup so easy!
  2. Peel the paper off of the tomatillos and place them in the baking dish along with the quartered onion, peeled garlic, and halved jalapeno.
  3. Place into a 450 degree oven to roast for 20 minutes. At the 20 minute mark, tomatillos should started to look charred. Flip the tomatillos, onion, garlic, and jalapenos and roast for another 10-15 minutes or until all the ingredients are charred and bubbly.
  4. While those ingredients are roasting, add the juice of 1 lime, 1 bunch of chopped cilantro, and 1/4 cup of olive oil to a blender. Pulse ingredients until the cilantro is pureed. Set this mixture aside until the tomatillos are done roasting.
  5. After the tomatillos, onions, garlic, and jalapeno are done roasting, immediately add them to the blender with the pureed mixture. Use caution as ingredients will be very hot! Blend with 1 teaspoon of salt until all ingredients are smooth.
  6. Salt salsa verde to taste and serve immediately.
  7. Any salsa verde leftovers can be stored in in a glass storage container in the refrigerator and consumed within 5 days.

Notes

How spicy is this salsa? We've found that adding one jalapeno with seeds adds the perfect subtle heat. If you are looking for less heat, remove the seeds. If you're looking for more heat, consider adding another jalapeno.

  • Tomatillos. While you might think tomatillos are green tomatoes, they’re not! Considered a Ground Cherry, tomatillos have a thin papery exterior called a husk and a sticky sweetness.
  • Jalapeno. Gives us the heat in this recipe. If you prefer less heat, consider scraping out the seeds of the jalapeno. If you’re looking for more heat in this recipe, add in another jalapeno.
  • Sweet Onion. We’ve made this recipe with several different varieties of onions but finally decided we preferred the flavor of a sweet onion the best.
  • Garlic. Adds a savory depth of flavor.
  • Cilantro. A classic, cilantro adds a zesty freshness to this salsa.
  • Lime Juice. The perfect bright flavor that compliments the sweetness of the tomatillos
  • Olive Oil. We love adding olive oil because it pulls all the ingredients together and adds a slight creaminess after blending.
  • Salt. I add in about 1 teaspoon in this recipe but it’s also important to salt to your preferences.

Step-by-Step instructions for how to make Roasted Tomatillo Salsa Verde-
