Cilantro Lime Cabbage Slaw

Cilantro Lime Cabbage Slaw
An easy and refreshing side salad perfect for serving on top of tacos, burritos, or as a side salad.
Ingredients
- 1 Large Head Green Cabbage, shredded
- 1-1 1/2 Cups Fresh Cilantro, chopped
- 1/4 Cup Lime Juice (about the juice of 1 lime)
- 1 1/4 tsp Real Salt
- 1/4 Cup Olive Oil
Instructions
- Begin by gathering all of the ingredients, a cutting board, a sharp knife, measuring spoons, a lime squeezer, and a large bowl.
- Cut cabbage in half, remove core, then finely shred cabbage. You want the cabbage thin and small so that it will fit easily in tacos and won't have large uneven pieces.
- Next, chop cilantro and toss it together with the shredded cabbage.
- Juice lime to equal 1/4 cup lime juice. (NOTE: in a pinch I have used concentrated lemon juice. Not quite the same, but it works.)
- Toss 1/4 cup lime juice, 1/4 cup Olive Oil, and 1 1/4 tsp salt into shredded cabbage and cilantro mixture. I prefer using a wooden spoon for this and pounding the cabbage as I toss it together. This helps the cabbage to produce natural juices and also helps the whole salad to come together.
- Allow cabbage slaw to sit for at least 15-30 minutes before serving. This allows all the flavors to come together.

- Cabbage: We used green cabbage in this recipe but feel free to add a combination of red and green if you want a little more color.
- Fresh Cilantro: One of our most favorite flavors. Feel free to add more or less depending on your preference.
- Lime Juice: Fresh squeezed is best. This recipe uses 1/4 cup which is about the juice of one large lime. In a pinch I’ve used concentrated lemon juice. It is not quite the same, but works in a pinch!
- Olive Oil: You just can’t beat the flavor of a good quality olive oil. It’s robust and smooth. It also adds some healthy fats to this salad!
- Salt: We prefer a high quality mineral salt for its great flavor and high nutrient content.

- Begin by finely shredding cabbage and place it to a large bowl.
- Then, chop the cilantro and toss it together with cabbage.
- Next, add 1/4 fresh lime juice, 1/4 cup Olive Oil, and 1 1/4 tsp Salt. Toss salad together, slightly pounding the cabbage to bring out it’s natural juices.
