Harvest Chili
Loaded with hamburger, black beans, sweet potatoes, carrots, onions, celery, and tomatoes – Harvest Chili is a simple one pan chili, perfect for the fall season or any time of the year when you need a cozy meal. It’s an elevated chili full of nutrients. We love “shopping our freezer” and pantry for items we grew in the garden over the summer and enjoy using them in this chili during the cold weather season.

Harvest Chili
A warm and cozy chili made with garden vegetables. This recipe is made in one pot for a quick and easy complete meal.
Ingredients
- 2 Sweet Potatoes, peeled & cubed (4 Cups)
- 1 Onion, diced (2 cups)
- 1.5 Cups Carrots, peeled and diced (approx. 3 large)
- 1 Cup Celery, diced
- 4 Cups Tomatoes, peeled if desired and diced
- 1 15 oz Can Black Beans, in water and salt only, undrained
- 1.5 Pounds Ground Hamburger
- 1 tsp. Cumin
- 1 tsp Chili Powder
- 3 tsp. Real Salt
- 1/2 tsp. Ground Black Pepper
- 1/8 tsp. Smoked Paprika*
- 3 Garlic cloves, minced
- 2 Tbsp. Butter
- 2. Tbsp. Olive Oil
- 1/2 Cup Water
Instructions
- Dice sweet potatoes, onion, celery and carrots and set aside.
- Dice peeled tomatoes and set aside.
- In a medium sized pan, sauté hamburger until almost fully cooked, drain if desired.
- Stir into the hamburger the minced Garlic Clove, Cumin, Chili Powder, Salt, Smoked Paprika and Ground Black Pepper and mix well.
- Add butter, olive oil, sweet potatoes, onion, celery, carrots and 1/2 cup water to hamburger and stir together.
- Stir then cover chili and cook on medium high heat to soften the vegetables -approx. 10 minutes
- Once vegetables are soft, add tomatoes and one can of undrained black beans. Stir together ingredients.
- Simmer to allow flavors to combine approx. 10 minutes.
- Optional- let mixture simmer on low for a half hour before serving to allow flavors to fuse together.
- Serve chili with buttered bread and topped with your favorite toppings like cheese or sour cream.
Notes
* Smoked Paprika is an optional ingredient but it is worth it! It adds such robust flavor to the chili.

Fall is the perfect time to make a cozy dish like Harvest Chili. Why? The fall season is the time of year where the weather begins to change, the temperatures are cooling, and we begin to crave something warm for supper. It is wonderful to be able to go out to the garden and find a few tomatoes left on the vine, I call them stragglers. Or maybe you’ve canned some over the summer. We like tossing a few whole tomatoes into freezer bags then into the freezer so we can pull them out at a later date to use in soups and chili recipes.
I pair the tomatoes with our garden onions, sweet potatoes, celery and carrots. Cook everything together in one pot for an easy to make meal packed with protein and veggies. It’s hard to beat a one pot meal!
This is the perfect chili if you need something quick or if you’re craving something cozy on a cold fall/winter day.

Step-by Step Instructions To Make Delicious Harvest Chili
Start by gathering all of the ingredients needed to make the chili. Did you notice the tops of the tomatoes in this picture have a black top? They add a wonderful roasted color to our Harvest Chili recipe and to our Tomato Soup recipe as well. Most of the time recipes call for peeled tomatoes. But these tomatoes have such a beautiful color, that I just leave the peels on and dice them a little smaller. They are called Indigo Apple Tomatoes if you would like to purchase seeds to plant in your garden. I purchase them here.
Next, dice the sweet potatoes, onion, celery and carrots and set aside.
Then cut up the tomatoes and place in a separate bowl and set aside.
Now it is time to cook the hamburger. In a 4 quart stock pot, set temperature to medium heat, cook the hamburger until it is no longer pink and slightly browned, drain if desired. Now, stir all the seasonings into the hamburger: Garlic Clove, Cumin, Chili Powder, Salt, Smoked Paprika and Ground Black Pepper and mix well.
Next add the butter, olive oil, sweet potatoes, onion, celery, carrots and 1/2 cup water. Stir well then cover with lid and simmer on medium heat until the vegetables are tender, approx. 10 minutes.
Once the vegetables are tender, add the diced tomatoes and one can of black beans, undrained. Simmer on low heat to allow flavors to combine approx. 10 minutes.
