Easy Grilled Veggie Skewers With Marinade

Easy Grilled Veggie Skewers With Marinade

Easy grilled veggie kabobs with a simple marinade for the best grilled veggie side dish, loaded with summer flavor.

Ingredients

  • 1 Large Zucchini
  • 1 Bell Pepper, any color
  • 1 Red Onion
  • 8 oz. White Mushrooms
  • 4 Tablespoons Olive Oil
  • 1 teaspoon Real Salt
  • 1/4 teaspoon Garlic Powder
  • 1/8 teaspoon Ground Black Pepper

Instructions

  1. Begin by soaking 8 wooden skewers in water for at least 15-30 minutes. This will help skewers not to burn.
  2. Next, slice veggies making sure each variety is sliced to about the same size so that they will cook evenly. Quarter onion and separate layers, chop pepper into 1"x1" pieces, halve or quarter mushrooms depending on their size, and slice zucchini into 1/2" rounds. Add all vegetables to a large mixing bowl.
  3. Add 4 tablespoons olive oil, 1 teaspoon salt, 1/4 teaspoon garlic powder, and 1/8 teaspoon ground black pepper to the vegetables and stir to coat vegetables evenly. Cover the vegetables and allow the vegetables to marinate for 15-30 minutes on the counter before skewering.
  4. After vegetables have marinated, skewer the vegetables on the skewers. I like to begin and end with a pepper or an onion to hold everything together. Alternate vegetables on the skewer making sure to slide them close together because they will shrink slightly as they cook.
  5. Preheat grill and then grill vegetable kabobs on medium high-high heat until the vegetable skewers are slightly charred and cooked to your preference. Make sure to rotate them often so that each side gets a nice grilled char. This process takes around 15-20 minutes depending on which vegetables you used in this recipe.
  6. Serve grilled vegetable skewers immediately with your favorite grilled or smoked dishes.
