A family favorite cheesy soup recipe for fall

Soup is one of my (Amanda) favorite things to make. It is an easy way to make a large meal with lots of veggies and protein all in one pot to fill everyone up. When the kids were young, they would invite their friends over for breakfast or supper and by the time the kitchen was cleaned, they were all hungry again. So, I had to figure out a way to make food that would stick to their ribs.

This is when cooking from scratch became fun for me. I would combine different ingredients together to see what my family enjoyed the most. I made soup come alive by adding half and half, heavy cream, cheese and/or potatoes. Especially for my husband, as he prefers a hearty soup rather than a meal with a lot of broth.

The Best Cheeseburger Soup is just that! This soup is packed with protein, vegetables, cream cheese and cheese. It is perfectly satisfying and oh so creamy.

Key features in This Cheesy Cheeseburger soup REcipe:

  • Lots of colorful, nutritious vegetables. While we’ve including potatoes, onions, celery, and carrots in this soup, feel free to sneak in extras like peas or even zucchini!
  • Creamy and cheesy- Two words that make any meal delicious! This soup is rich with flavor from milk, shredded cheese, AND cream cheese.
  • A delicious broth base for extra protein- Not only does this soup have ground beef but they broth is also high in protein making this the perfect one pan meal.
  • Includes simple, pantry staple ingredients for an easy dinner- We love a recipe that doesn’t include a lot of extras. This soup is perfect for last minute planning because we enjoy keeping things simple and wholesome.

From scratch kitchen tips

  • What goes well with The Best Cheeseburger Soup? We love to serve this with a dinner roll on the side that we cut in half, add butter and broil in the oven to make it crisp. A nice dinner salad with this dressing is also a light and refreshing side dish.
  • How do you get the cream cheese to melt into sauce without clumping or curdling? While cream cheese is cold cut into chunks then let it sit on the counter for 5 minutes to warm to room temperature before adding to the hot soup and stir immediately until smooth
  • What is the best way to store leftovers? We put all of our leftovers in a glass food safe container and place in the refrigerator once it has cooled completely. Use leftovers within 3-4 days.
  • What kind of toppings go well on The Best Cheeseburger Soup? This soup is great to serve along with a variety of toppings to choose from. We love bacon, green onion, shredded cheese, jalapeno slices or red pepper flakes.
