  • 2 Cups Carrots, diced
  • 4 Large Potatoes, peeled & diced
  • 1 Cup Peas
  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Real Salt, plus more to taste
  • 1/4 Teaspoon Ground Black Pepper
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Garlic Powder
  • 2 Tablespoons Flour (you can use fresh milled)
  • 1 Cup Half & Half
  • 16 oz. Chicken Broth

Fresh Milled Drop Biscuits

  • 760 Grams Soft White Wheat
  • 4 Teaspoons Baking Powder
  • 1 Teaspoon Real Salt
  • 2/3 Cup Cold Butter, cubed
  • 1 3/4 Cup Whole Milk

Instructions

  1. We are going to bake this Chicken Pot Pie in the same 12" cast iron skillet we prep the ingredients in. If you are not using a 12" cast iron, a 9x13 baking dish will work. If using a 9x13, grease the dish.
  2. Begin by weighing out and milling 760 grams of soft white wheat which we will use for the biscuits. This allows the flour to cool before making the biscuits. Set flour aside.
  3. Heat a 12" cast iron skillet or large skillet on medium heat with 2 Tablespoons of Olive Oil and 2 Tablespoons of butter. Once skillet is heated, add 2 pounds of diced chicken breast. Season chicken with 1 teaspoon Real Salt, 1/4 teaspoon ground black pepper, 1 teaspoon onion powder, 1 teaspoon garlic powder and then sauté until fully cooked. Remove from pan and set aside.
  4. In the same skillet, sauté on medium heat 1 large diced onion, 1 cup diced celery, 2 cups diced carrots, 4 large peeled and diced potatoes. You may need to add a couple more tablespoons of olive oil depending on how much drippings were left in your pan after you sautéed the chicken. Sauté vegetables until al dente.
  5. Preheat oven to 450 degrees so that it can start heating while you prepare the rest of the recipe.
  6. Once the vegetables are tender, add the cooked chicken back into the skillet. Turn burner to medium-medium high heat and sprinkle the veggies and chicken with 2 tablespoons of flour. Stir to combine. Then, slowly add in 16 oz. chicken broth and 1 cup half & half a little at a time, stirring after each addition. Slowly, mixture will begin to thicken. Once thickened, stir in 1 cup of peas and then turn burner off while you prepare the fresh milled biscuits.
  7. In a large mixing bowl, combine 760 grams fresh milled flour, 1 teaspoon real salt, and 4 teaspoons baking powder. Stir to combine. Next add 2/3 cup cold cubed butter and cut this into the flour mixture using a pastry cutter until butter is in pea sized cubes. Then fold in 1 3/4 cup of milk.
  8. Form into 12-13 biscuits and place on top of Chicken Pot Pie filling in the cast iron skillet. If using a 9x13 baking dish, pour chicken pot pie filling into greased baking dish and then place biscuits on top.
  9. Bake at 450 degrees for 10 minutes. Chicken Pot Pie will be bubbling and biscuits will be golden on top. Allow Chicken Pot Pie to cool for 5 minutes before serving. This allows filling to set. Enjoy!
  10. Store Chicken Pot Pie With Fresh Milled Biscuits in the refrigerator and consume within 5 days.
