Fresh Milled Flour Ice Cream Sandwiches

Fresh Milled Flour Ice Cream Sandwiches
These Fresh Milled Flour Ice Cream Sandwiches combine your favorite ice cream between a fresh milled fudgy brownie. What's not to love?!
Ingredients
- 1 Cup Dark Chocolate Chips
- 3/4 Cup Butter
- 1 Cup Granulated Sugar, cane or coconut
- 3 Eggs
- 1 teaspoon Real Vanilla Extract
- 190 Grams Soft White Wheat
- 1 Quart Ice Cream
Instructions
- Preheat oven to 350 degrees and line a bakers half sheet pan with parchment paper.
- In a microwave safe bowl or in a small saucepan, melt 1 cup of Dark Chocolate Chips and 3/4 Cup of butter. Once melted, set aside to cool slightly.
- While chocolate and butter are melting, weigh out 190 grams of soft white wheat berries and mill them. Set this fresh milled flour aside.
- In a medium sized mixing bowl, whip together eggs and 1 cup sugar using a hand-held mixer. Whip for 2-3 minutes or until mixture is frothy. Next whip in vanilla extract and melted chocolate chip mixture. Fold flour into wet ingredients just until batter is combined.
- Spread brownie batter into bakers half sheet pan. Brownie batter will be thick, so take your time spreading evenly. Bake brownies at 350 degrees for 15-18 minutes or until top is slightly firm to the touch.
- Allow the brownies to cool completely. This should take around 1/2 hour. Slice brownies into desired ice cream sandwich sizes using a plastic knife. (The plastic knife allows you to slice through without dragging brownie with you on the knife.)
- Separate brownie slices onto two sheet pans and pop them in the freezer for 1/2 hour-1 hour to chill. This will allow you to spread the ice cream without them falling apart.
- About 5 minutes before you are ready to assemble, take ice cream out of the freezer to thaw slightly. The amount of time will depend on the brand of ice cream you are using.
- Assemble only a few sandwiches at a time because you may have to pop the ice cream back in the freezer before making the next round. Working quickly, generously scoop ice cream onto bottom half of sandwich and spread evenly. Press the top brownie onto the sandwich. At this point you can wrap them individually with plastic wrap or parchment paper or you can lay them in a container with a lid.
