Freshly milled peach cobbler is such an easy dessert to make during the summer peach season. Refreshing peach flavor with a tender biscuit top and loaded with cozy cinnamon spice.
Ingredients
Peach Filling
- 6 Cups Fresh Peaches (6-8 large peaches), peeled and diced
- 1/4 Cup White Sugar
- 1/2 Tbsp. Arrowroot Flour (or cornstarch)
- 1 Tbsp. Lemon Juice
- 1 tsp. Pure Vanilla Extract
- 1 tsp. Ground Cinnamon
- 1/8 tsp. Ground Cloves
- 1/8 tsp. Ground Ginger
- 1/8 tsp. Salt
Cobbler Topping
- 2 Cups Freshly Milled Soft Wheat Flour (grind 3/4 cup grains)
- 1/2 Cup White Sugar
- 1 1/2 tsp. Baking Powder**
- 1/4 tsp. Baking Soda
- 1/2 tsp. Salt
- 6 Tbsp. Cold Butter
- 1/4 Cup Buttermilk plus one Tbsp. more if needed*
Cinnamon/Sugar Topping
- 2 Tbsp. White Sugar
- 1 tsp. Ground Cinnamon
Instructions
- Preheat oven to 350 degrees and lightly grease a 9x13 baking dish.
- In a bowl, mix together all peach filling ingredients. Spread in baking dish and bake for 10 minutes.

- While peaches are in the oven, prepare cobbler topping. In a bowl combine all dry ingredients. Cube cold butter and cut butter into dry ingredients using a pastry cutter. If you don't have a pastry cutter, a fork works great too!

- Stir milk into cobbler topping mixture just until all ingredients are incorporated. If topping seems a little too dry, add 1 Tbsp. milk. Mixture should be slightly sticky.

- Remove peaches from oven and evenly crumble topping over the top of the peaches.

- Mix together cinnamon and sugar mixture and sprinkle over the top.

- Bake cobbler for 40-50 minutes or until top is deeply golden and cobbler is bubbling.

- Can be served warm or cold. Refrigerate for at least 6 hours if serving cold. Highly suggest serving it with vanilla ice cream.

*Don't have buttermilk on hand? Make your own using 1/4 cup milk plus 1/2 tsp apple cider vinegar.

Oh peach season! How I love you! Nothing says summer like a juicy peach. I love biting into it like an apple and letting that beautiful juice run down my chin and down the side of my arm. So satisfying!
When peach season abounds, so do thoughts of all the things I could do with them. Simply slicing and eating them is wonderful. Have you ever diced them up and poured maple syrup, milk and cinnamon over them?! You are not truly living until you’ve had peaches and cream. I am drooling! But now is also the season when I can make jams and pies and cobblers! This year I was craving cobbler.
What is freshly milled peach cobbler?
Crumble, crisp, or cobbler? Each has its own unique flavors and textures. Each of them are so easy to make. But, when it comes to cobbler it takes you right back to simpler times like summer evenings in a rocking chair on the front porch. You just know everyone had a bowl of cobbler and vanilla ice cream in their hands.
Peach cobbler can be made in many ways, but all of them have a biscuit like topping on top of a fruit filling. It’s the biscuit top that draws me to this recipe. It’s more like a fluffy dumpling rather than a flaky biscuit and it pairs perfectly with the buttery, crisp cinnamon sugar top.
Ingredients needed to make peach cobbler?
Freshly milled peach cobbler is so easy to make with just a few ingredients and a handful of cozy spices.
- Peaches. Fresh is best. Perhaps a friend will let you pick from their tree? Maybe your fruit trees are overflowing? Or maybe you just got them when it was peach season in the grocery store.
- Sugar. Choose the sugar that you prefer weather it is white, brown, maple, or coconut sugar. I chose to use white sugar in this recipe.
- Arrowroot Flour for a thickener. You can also use cornstarch.
- Lemon juice keeps those peaches fresh.
- Spices like cinnamon, clove, and ginger to enhance those summertime peach flavors
- Pure vanilla extract. Every good baked good needs it.
- Freshly milled flour. I have slowly transitioned most of my baking over to using freshly milled grains for the benefits like added protein, fiber, and nutrients.
- Butter. Keeps that cobbler topping fluffy and delicious.
- Buttermilk. The secret ingredient to cobbler success. Don’t have any buttermilk? You can easily make your own buttermilk by combining milk and apple cider vinegar.

Do I need to peel my peaches when I make peach cobbler?
The short answer: YES! You will definitely thank me later as peels tend to separate from the fruit and make the eating experience far less enjoyable.
Take a little time and peel the peaches with a sharp knife. I could tell you all the kitchen hacks on how to peel peaches efficiently but when it gets down to it, just grab a sharp knife and go to town. Turn on your favorite podcast and it will go even faster!
Why does this recipe call for freshly milled flour?
Freshly milled flour is flour in the form it was meant to be consumed in. The short story is that in the early 1900’s they changed how they sold milled flour to make it more shelf stable. When they did this, they stripped the grain of parts that spoil quickly and they left us with the starchy substance we call flour today, which is far from its original form.
Unfortunately, the parts they stripped from the grain for the sake of convenience are actually the most nutrient dense parts and also the parts your body needs to help you digest it properly.
Freshly milled flour contains 40 of the 44 nutrients needed to sustain the human body. It is also loaded with plenty of fiber and protein. It is so beautiful the way God designed food to fully nourish our bodies!
I have been slowly transitioning our family over to freshly milled flour and it has been a wonderful experience. Freshly milled flour tastes so delicious and I can feel good about the benefits we get from consuming it! Even a dessert can be filled with healthy goodness when using food the way God intended it!
