Easy Fresh Milled German Pancakes

Sometimes called a Dutch Baby, these Easy Fresh Milled German Pancakes are high in protein, loaded with nutrition, and with only 6 ingredients they make the perfect easy breakfast. They are crisp around the edges and oh so puffy. We love topping them simply with maple syrup and powdered sugar.

Easy Fresh Milled German Pancakes

A high protein nutritious breakfast, this Fresh Milled German Pancake is so easy and fun to make. It makes a delicious breakfast topped with maple syrup and powdered sugar.

Ingredients

  • 6 Eggs
  • 1 Cup Fresh Milled Soft White Wheat Flour, spooned and leveled
  • 1 Cup Whole Milk
  • 1 tsp Real Vanilla Extract
  • 1/8 tsp Real Salt
  • 5 Tablespoons Butter

Instructions

  1. Preheat oven to 375 degrees and gather all of the ingredients needed. Timing is everything in this recipe so it's a great idea to have everything prepped ahead of time.
  2. Mill soft white wheat berries to make 1 Cup of fresh milled flour. Set aside.
  3. Once oven is preheated, place 5 tablespoons of butter into a 9x13 baking pan and put the pan into the oven to melt the butter. This should take around 3-4 minutes.
  4. While butter is melting, add 6 eggs, 1 cup of milk, 1 cup of fresh milled flour, 1 tsp vanilla extract, and 1/8 tsp of salt to a blender. (*see note) Blend until mixture is smooth and all ingredients are combined.
  5. Once butter is melted, swirl butter in the pan to evenly coat the bottom of the pan and then immediately pour pancake mixture into hot butter. Pour mixture into the center of the butter so that the melted butter surrounds the pancake mixture. This will ensure your pancake rises correctly. Do not stir this together.
  6. Bake the German Pancake for 25 minutes. Do not open the oven door while pancake is baking. Pancake edges will have lifted out of the pan and pancake will be golden brown when done.
  7. Slice and serve the German Pancake immediately covered with maple syrup and powdered sugar. It is also delicious served with whipped cream and berries on top.
  8. This German Pancake is best served immediately, you can store any uneaten pancakes in the refrigerator for up to 5 days. We have also had success freezing the leftover pancakes in a freezer safe container and then defrosting and reheating them before serving.

Notes

*It is important to blend ingredients in a blender. We have found that blending ingredients in a blender whips the batter better. This is especially true when using the fresh milled flour because it is higher in fiber due to the bran. If you don't have a blender, a hand mixer would also work.

Can you freeze this recipe? Yes! While pancakes are best served when they are hot and fresh, we have found great success freezing Fresh Milled German Pancakes in a freezer safe container. Simply defrost and reheat before serving.

Step-by-Step instructions to make German Pancakes With Fresh Milled Flour-

  • What is the secret to a puffy Fresh Milled German Pancake? Timing is so crucial in this recipe so make sure you have all the ingredients gathered before making these German Pancakes. We have found that it is very important to pour the pancake batter directly in the middle of the HOT butter and to not open the oven door while the pancakes are baking.
  • Do you have to use a blender to make this recipe? We have found that blending all the ingredients at high speed really helps this recipe to be blended properly. A hand mixer would also work.
  • What is the best way to store Fresh Milled German Pancakes? These pancakes are best served immediately to appreciate their crisp exterior and custardy center, however, any leftover pancakes should be stored in an airtight container in the refrigerator and consumed within 5 days. We have also had success freezing Fresh Milled German Pancakes and then defrosting and reheating them later.
