Fudgy Fresh Milled Brownies
An easy recipe for indulgent and fudgy brownies made with fresh milled flour. Chocolatey and fudgy with a slightly crisp exterior.
Ingredients
- 1 Pkg (4oz) Bakers Unsweetened Chocolate Bar
- 3/4 Cup Butter
- 2 Cups Granulated Sugar (I used Coconut Sugar)*
- 3 Eggs
- 1 tsp Real Vanilla Extract
- 190 Grams Fresh Milled Soft White Wheat**
Instructions
- Preheat oven to 350 degrees and line a 9x13 baking pan with parchment paper.
- In a microwave safe bowl or in a small saucepan on the stove, melt 3/4 Cup Butter with one 4 ounce Bakers Unsweetened Chocolate Bar. If using the microwave, microwave for 1 minute, stir, and then microwave for another minute or until mixture is melted and smooth.
- In another large mixing bowl, mix together 2 cups granulated sugar, 3 eggs, and 1 tsp Real Vanilla Extract using a handheld mixer. We really want to whip this together. Mix until eggs and sugar are frothy, 1-2 minutes. This will ensure that classic crinkle top on the brownies after they bake.
- Once butter and chocolate mixture is melted, pour into egg and sugar mixture and blend well using the hand mixer until smooth.
- Weigh out 190 grams of soft white wheat berries and mill them into flour. Add flour to wet ingredients and fold in to combine. Mixture will be thick. At this point you can fold in 1 cup chopped nuts or chocolate chips if desired. This recipe is very rich already so I chose not to.
- Spread brownie batter evenly in the bottom of a parchment paper lined 9x13 pan.
- Bake brownies for 20-25 minutes or until toothpick comes out with fudgy crumbs. Do not overbake.
- Let brownies cool completely before slicing. TIP: I always slice my brownies using a plastic knife, this allows for a smooth, clean cut.
- Store brownies in an airtight container on the counter for up to 5 days or in the freezer for future enjoyment.
Notes
* What type of sugar should I use in these brownies? While I chose to use coconut sugar in this recipe, any type of granulated sugar will work. If you're looking for a very crinkly brownie top, I would suggest using cane sugar.
**Why do you measure the wheat berries in grams? I choose to measure the berries in grams and then mill them versus measuring in cups becuase it is a more consistent form of measurement when baking with fresh milled flour.

Step-by-Step Instructions to make Fudgy Brownies with Fresh Milled Flour-

Allow brownies to cool completely before slicing. PRO TIP: Slice brownies using a plastic knife. A plastic knife makes a clean, smooth slice without the brownie collecting on the knife.
Valentine’s Day Fresh Milled Brownies:
If you desire to make your brownies a little fancy, especially for a fun fresh milled Valentines Day dessert, consider adding a stencil and dusting with powdered sugar. Simply cut out the stencil from heavy cardstock or cardboard and place on top of your brownie slice. Then, using a fine mesh sifter, gently tap the sifter over the stencil until your desired design is filled. Gently remove stencil and voila!
