Chicken Soup with Old Fashioned Dumplings

Ingredients

  • 5 Medium Carrots, diced
  • 1 Medium Yellow onion, diced
  • 2 Stalks Celery, diced
  • 2 Tbsp. Butter
  • 2 Double Sided Chicken Breasts, diced into small pieces
  • 4 Cups Chicken Bone Broth
  • 1/2 tsp. Black Pepper
  • 1-2 tsp. Salt or to taste
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1 Pint Heavy Cream

Dumpling Ingredients

  • 4 Tbsp. Melted Butter or Oil
  • 2 Cups Unbleached All Purpose Flour
  • 4 tsp. Baking Powder
  • 1 tsp. Salt
  • 1 Cup Milk
  • 1 1/2 tsp. Parsley

Instructions

  1. In a 4 Qt. stock pot on medium heat, sauté diced carrots, onion and celery in 2 Tbsp. of melted butter. Season with 1/2 tsp. salt.
  2. When vegetables are partially cooked, add diced chicken breasts and cook chicken until tender and no longer pink.
  3. Season chicken and veggies with remaining salt, pepper, onion powder & garlic powder. Slowly pour in broth and let simmer over medium heat for about 15 minutes.
  4. To prepare dumplings, mix together flour, baking powder and salt into a large mixing bowl and set aside
  5. If using butter, melt in microwave a few seconds, if using oil skip this step.
  6. Mix milk into butter or oil and pour over dry ingredients. Mix to combine.
  7. Drop dumplings by the tablespoon into simmering soup and cover with a lid.
  8. Let soup return to a slight boil then reduce heat to a very slow simmer.
  9. Cook for 15 minutes covered and then remove lid.
  10. Carefully separate dumplings to create space to pour in cream to thicken soup
  11. Sprinkle the top with parsley to garnish.
  12. Serve immediately.

Notes

*NOTE: It is very important to not remove lid while dumplings are cooking.

  • Chicken Bone Broth – I prefer bone broth because it is full of nutrients and flavor

    1. Hello Andrea,
      We have not tried it with fresh milled dumplings however it would be very simple to try! If I were to try it, I would use soft white berries and would increase the amount of flour slightly. You want the mixture to be like the consistency of drop biscuit dough. I will put it on my list to add a fresh milled version of this recipe to the blog in the future.
